I absolutely love this salad that Andreas made. If you have seen the Cucumber Salad and the Light and Healthy Salad Dressing Recipes, then you will be familiar with the ingredients for the Curry Cole Slaw.
- 1/2 cabbage head
- 1 carrot
- 2 tbsp oil (either olive or vegetable)
- 2 tbsp vinegar (can be apple or white)
- 1 tsp salt
- 1 tsp sugar
- dash(es) of curry
- 1/2 cup water (or more…see below)
Mix the oil, vinegar, salt, sugar, curry and water.
You may need to add more water dependent on the strength of the vinegar. Best would be to taste and then add accordingly.
The same with the curry. You may choose to add more or less, dependent on how much Curry flavor you like.
You will want to slice the cabbage into small strips and shave the carrots.
Add the oil and vinegar mixture above to the cabbage and carrots and let them fuse together for about an hour before you serve. You will love it!
