Cucumber Salad or Gurken Salat Recipe

By: denise designed

Have you ever had a good ‘ol German Cucumber Salad?  Also know as Gurken Salat?

Everyone who seems to try our recipe, LOVES it!

I hope you do as well because I am going to give you the recipe below.

Ingredients:

  • 1 Peeled Cucumber
  • Non-Fat Plain Yogurt
  • White Vinegar
  • Salt
  • Pepper
  • Chives
  • Mustard
  • Sugar
  • Dill (optional) – I don’t add Dill to mine, but some do

It really helps if you have a Mandoline Slicer.

unnamed

Slice the cucumbers fairly thin either by hand or with a Mandoline Slicer.  If you are using a slicer you will probably set it on #2.  You want the thickness of a quarter.

Once sliced, use yours hands, and in the bowl, squeeze the cucumbers so that some of the water is squeezed out.  You can leave the water and the wrung cucumbers in the bowl.

Chop the chives

In the bowl with cucumbers, add the chopped chives, 2 large tablespoons of yogurt, 2 splashes of vinegar, teaspoon of salt, one teaspoon of sugar, a squeeze of mustard and then the pepper.

Using a spoon, mix all ingredients together.

You can garnish with dill, if you so choose.

TASTE

Here are some tips:

  1. If it tastes too salty – ADD sugar
  2. If it tastes like it has too much vinegar – ADD more salt, sugar and yogurt

If you want to taste mine, let me know and you will be welcome for dinner!!

ENJOY!!!

I love cucumber salad. My cucumbers were a disaster this summer and I didn’t get to eat cucumbers nearly enough. Thanks for sharing with this week’s Throwback Thursday party.

Yes I have had this salad often in German and Austria but never knew how to replicate it at home. I will give this a go! Yes I love fresh dill in the salad. Thanks for the recipe.
